The name Samphire was originally "Sampiere" a variation of the French "Saint Peter" was named for the patron saint of fisherman and was found growing in the seasprayed areas along the coast of Northern Europe. It is sometimes called Sea Asparagus.

Marsh Samphire is more widely available and succulent than Rock Samphire as is used as an accompaniment to fish dishes owing to its salty nature.

It is at its beast during July and August.

We like this name and think it is unusual and very suitable for the style of our restaurant.

We try and serve Samphire as and when it is available.
